Unlike other southern fried chicken joints where the breading gets clumpy and chunky, the breading on this is smooth and leaves a PERFECT skin. It resembles more of the type of smooth texture you would find on wings, ESPECIALLY at Asian restaurants. It is amazing fresh out of the fryer and cold the next morning!
